Trung Duc Thit (Vietnamese Meat Omelette)
Growing up, we made many home-cooked, 30-minute meals, and this one was a series regular! Trung Duc is quite literally a crispy omelet, filled with pork, eggs, vermicelli (bean thread) noodle, black fungus, and onions. I loved eating this with rice and a bowl of soup as a kid!
Ingredients:
10 large eggs
1 pound pork
1/2 ounce of dehydrated black fungus
1/2 bundle (19 grams) of vermicelli (bean thread) noodles
1 cup of finely diced yellow onion or shallot
1 teaspoon soy sauce
4 tablespoons fish sauce
1 pinch of sugar
Instructions:
Fill a bowl with hot water and rehydrate black fungus and vermicelli, about 5 minutes
Drain and cut black fungus and vermicelli into tiny pieces using scissors, the smaller the better
Finely chop your shallots
In a separate bowl, add in ground pork, shallots, vermicelli and black fungus
Add soy sauce and a pinch of sugar
Add in your eggs
Adjust your eggs to your liking. Our family likes a more egg-forward omelete so we stick with 10 eggs per pound of pork
Add in 4 tablespoons of fish sauce
